How to cook
Grate half of the washed apples on a coarse grater, and cut the other half into very thick crescents for the decoration. Mix the breadcrumbs with the cinnamon and separately, the semolina with the baking soda.
Separately, beat the egg yolks with the honey and cocoa and add them to the grated apples. Stir and add the semolina with baking soda and cinnamon with the breadcrumbs. Finally, gently mix in the beaten to snow egg whites.
Put the mixture into a greased baking tin, arrange the apple crescents on top and put it to bake in a moderately heated oven at 374°F (190 °C), for about 35 minutes.
