Another star in the world of Gazpacho is the one with white asparagus. It combines a light and delicate taste and would be a delight for even the most capricious person.
Prepare it for your guests and serve it in bowls or small cups decorated with sliced almonds and asparagus tips.
You can cook white asparagus yourself or use canned ones. In both cases, the canned or boiled liquid will also be used for the gazpacho. If you are worried that the purchased asparagus contains preservatives in the water, it is not a problem to throw it away and use pure mineral water.
The first step is to grind the raw peeled almonds. Then grind the bread, if it is very dry and in case it is soft, you will can it directly to the other products. It is good to use only the middle of white bread, so that it does not change the color of the gazpacho.
Add the cucumber (peeled and cut into pieces) to the ground almonds and bread, the soft and tender white asparagus, onion, vinegar, olive oil, 1 cup (250 ml) from the boiling or canned water (or as we said - pure water), salt and black pepper.
Grind everything in a blender for about 3 minutes, so that the soup has a perfectly smooth and tender texture.
Transfer the white gazpacho into a jug or another container convenient for you and refrigerate it for a minimum of 1 hour.
Serve this sumptuous white asparagus gazpacho well chilled.
