How to cook
For the vegan pudding we are using homemade oat milk and for this purpose we soak for about 20 minutes, 3-4 tablespoons of fine oatmeal in 1 cup of spring or filtered water.
Then pour the mixture into the jug of the blender and blend it until you get a fine milk with foam.
Strain the vegan milk through a fine sieve from the oats and pour it back into the jug. Add 1 peeled, washed and sliced kiwi and blend again until you get a soft light green milk with foam.
Pour 3 full tablespoons of chia, 1 tbsp. freshly squeezed lemon juice, 1 tbsp. brown cane sugar crystals - Demerara and 1 packet of vanilla in it. Mix the ingredients and let the chia absorb the milk - for about 1 hour.
Once the pudding thickens, it's time to create the dessert in the glass. Cut the kiwi into circles, pour about 3 tbsp. of the milky chia at the bottom of the glass and arrange kiwi slices on the glass - all around it.
Fill the cup with the rest of the mixture and decorate the top with a slice of kiwi.
A healthy and dietary sweet and sour vegan chia pudding with kiwi and lemon, suitable as a fresh snack.
