Ingredients

  • basmati rice - 1 cup
  • water - 2 cups
  • shallots - 1 head (red)
  • cumin - 1 tsp, seeds
  • cashews - 3.5 oz (100 g), lightly crushed
  • raisins - 3 1/3 tbsp (50 g)
  • turmeric - 1 tsp
  • cardamom - 4 - 5 pods
  • bay leaf - 2
  • saffron - 1 pinch
  • cinnamon - 1 stick
  • oil
  • salt

How to cook

Boil water in a pot, along with the saffron. Heat oil in a pan and put the cashews to fry, then add cumin, cardamom, cinnamon and mix well. Add the chopped shallots, turmeric, bay leaves and the pre-washed rice and raisins.

Stir until the rice fries and pour in more hot water. Put the lid on and let it stew on low heat. Boiling lasts about 12 minutes, then stir, put the cover back on and allow to brew for half an hour.
