How to cook
Pour the water with a pinch of salt into a large pot and boil it. Once this is done, put the pork tongue in it. It will be ready in about three hours. You will know that it is cooked, once it has softened.
Put it in a bowl of ice water once it is ready. Peel and slice it. That way you can store it in the freezer, if you're not going to eat it right away.
Otherwise, arrange the meat in a baking pan. Season it with black pepper and salt. Add enough broth to cover the slices of meat.
Bake them for 60 minutes at 356°F (180 degrees). When they're ready, arrange the pieces of butter on top. The result is a super tasty tongue in butter.
