Ingredients

  • peppers - 4 red
  • rice - 1 cup
  • eggs - 2
  • yogurt - 1/2 cup
  • oil - 3 tablespoons
  • olives - 20
  • tarragon
  • salt

Preparation

The peppers are cut in half lengthwise and cleaned of stems and seeds. Fry them in a pot with the oil until golden.

Make a stuffing by mixing the previously boiled rice, mashed yolks of the boiled eggs, cleaned from pits olives, chopped tarragon, yoghurt and salt.
