"The army of the tastiest fruit muffins just grew by one more with these irresistible muffins with bananas and raisins."

Ingredients

  • eggs - 2
  • yoghurt - 3/4 cup
  • sugar - 1 cup
  • vegetable oil - 3 1/3 tbsp (50 ml)
  • flour - 3/4 cup, rice
  • coconut flakes - 1 1/2 cups
  • bananas - 3/4 cup, crushed
  • raisins - 1 - 2 tablespoons
  • vanilla - 1 tsp
  • cinnamon - 1/2 tsp
  • baking powder - 1 tsp

How to cook

Mix the eggs, yoghurt, vegetable oil and mashed bananas together. In a separate bowl, mix the rice flour, sugar, baking powder, cinnamon and vanilla.

Add the dry ingredients to the liquid ones, mix well and add coconut flakes. Preheat the oven to 390°F (200 °C) and put the muffin forms to warm slightly. Take them out, lightly grease them and distribute some of the dough in them.

Put them to bake, checking the readiness with a stick. When done, let the muffins sit for about 25 minutes before removing them from the oven.
