How to cook

Take the meat from the leg. Wash it well and tenderize it, rub it on all sides with salt, pepper and bay leaf. Top it with boiling vinegar.

Leave it in a cool area for a few days, flipping the meat over every day. Once you remove it, drain it and bake in a dish with bacon pieces arranged on the bottom. Smear the bottom of the dish with butter.
