How to cook
Boil the semolina in the milk with a pinch of salt and cool it. Beat the butter with the sugar, 2 eggs and 4 yolks and then mix with the cooled semolina.
Add the lemon zest, drained and finely chopped fruits from the jam, raisins. Finally, add the beaten to hard snow egg whites. Pour the mixture into a greased mold and boil for 45 minutes in a water bath.
Serve the pudding with diluted fruit syrup, mixed with brandy, rum, or sweet sauce.
