How to cook
Break the eggs into a bowl. Add the sugar and vanilla. Beat them with a mixer until a fluffy cream is obtained.
In another bowl, blend the spinach with the oil until a smooth mixture is obtained. Add it to the eggs.
Continue to mix with the mixer, while adding small amounts of flour (mixed with baking powder).
Put baking paper in a baking pan with a removable bottom.
Transfer the mixture in it. Bake the spinach cake layer in a preheated oven at 338°F (170 degrees) until it is fully baked. Take it out and leave it to cool.
Beat the cream with the vanilla and 2 tbsp. of powdered sugar.
In another bowl, beat the mascarpone, sour cream and remaining sugar. Mix the two mixtures with a silicone spatula.
Cut the cake layer into 3 equal parts. Assemble the cake with mascarpone and by alternating breadcrumbs, cream, sliced strawberries.
Finish it off with cream and decorate the spinach cake as you like.
Leave the spinach cake with mascarpone and strawberries in the refrigerator for a few hours.
