How to cook
Wash and slice the mushrooms, pepper and onions.
Peel and slice the tomatoes.
Heat the oil and saute the onions and pepper for 3-4 minutes on low heat. Add the mushrooms and cook for 3-4 additional minutes.
Add the toaotes, paprika, and black pepper, cover with a lid and simmer for 15 minutes, or until the liquids evaporate.
Pee the potatoes and cook in salted water for 20 minutes.
Serve your Vegetarian Goulash with potatoes and sprinkle with finely chopped parsley.
