How to cook
Mix the sugar, flour and vanilla. Add the lard (at room temperature), the beaten eggs and 1 egg white to these. Knead a soft dough and leave it to rest for 1 hour. Then divide it into 2 parts. You can mix one part with the cocoa if desired at this point.
Roll out one part into a sheet with a thickness of 1/4 (6 mm) on a floured surface. Cut out the desired figures using cookie shapes, arrange the cookies on a tray with baking paper. Put them to bake in a preheated 356°F (180 °C) oven for about 5 minutes.
Stick the ready cookies together in pairs with jam and sprinkle or roll them in powdered sugar.
