How to cook
Clean the fish fillets from the bones, but leave the skin. Marinate the fish in a mixture of olive oil, lemon juice, white pepper and salt. Leave them in it for at least 2 hours.
Heat the grill, but keep in mind that the temperature should be neither too high nor too low. If you are going to cook the fish on a grill with wood, it is best to cook it on a smoldering fire.
Grease the grill with bacon. Dry the fillets with kitchen paper and bake them on the skin side first.
When the edges lose their transparent hue, turn the fish over and bake it on the other side for 3-4 minutes.
The cooking time for the fish depends on its thickness. However, do not overcook it, so that it doesn't dry out.
Sprinkle the grilled fish with olive oil and serve it with a garnish of your choice.
