How to cook
Boil, cool and peel the eggs. They must be hard boiled.
The onions can be prepared in two ways - as it is fresh, chop it into small pieces or if it is slightly spicy and not suitable for direct consumption, blanch it chopped for 5 minutes, then drain and dry it on kitchen paper.
Finely chop the eggs along with the onion, add the mayonnaise, mustard, chopped parsley, paprika, black pepper and salt.
Stir the egg salad and spread two or three spoons or more of it on the slices of bread.
Put fresh baby spinach leaves under or on the egg salad.
Cover each slice with another to complete the sandwiches.
If desired, sprinkle them a little olive oil on top.
