How to cook
Mash the black beans in a mortar and pestle and soak them in water. Heat oil in a wok. Add the pressed garlic and finely chopped ginger. Add the chicken wings and fry for about 3 minutes while stirring.
Pour in the soya sauce and wine and stir for half a minute. Add the drained beans and black pepper. Cover the wok and let it boil on a low temperature. Then remove the cover and increase the temperature again. Cook until the liquid boils off.
Remove the dish from the heat and sprinkle it with sesame seeds, then stir to distribute them evenly. Serve sprinkled with green onions or cilantro.
