Peel the potatoes and cut them into pieces. Put them in a pot of water to boil, but not to overcook. Add a little salt during boiling.
Drain the ready potatoes well and pat them dry with paper towels. Preheat oil in a deep pan and add the butter and potatoes. Stir and season with salt and black pepper and add the garlic.
Fry the potatoes and stir gently until they acquire an appetizing golden color. Finally, if desired, add chopped dill or parsley and mix before serving.
