Veliko Tarnovo-Style Stuffed Carp

  • carp - 4.5 lb (2 kg), whole
  • parsley - 5 bunches
  • thyme - 10 bunches
  • paprika - 1 tablespoon
  • onions - 3.5 oz (100 g)
  • flour - 1 2/3 cups (400 g)
  • oil - 1/2 cup
  • salt - to taste


Knead a dough from the flour, a little salt and cool water; roll it out into a thick sheet. Chop the onions finely and saute them in oil and a little water until soft.

Remove them from the heat and mix with the finely chopped parsley, thyme, paprika and salt to taste. Fill the cleaned, washed and salted carp with the prepared stuffing, stitch it and wrap it in the sheet of dough.

Put it in a greased tray and bake in a moderate oven. Serve this stuffed carp warm.find similar recipes here
