How to cook
Cook the rice in water.
Allow it to cool and add the egg, salt and pepper.
Mix well and let the rice cool completely.
Make small balls out of the rice mix and place a small cube of mozzarella in the middle. Seal the cheese and form round patties.
Whisk the eggs for the breading. Dip each rice ball in egg wash, roll it in the breadcrumbs and dip it again in the whisked eggs.
Fry in hot oil until the arancini turn golden brown.
