How to cook
Soak the bread in milk, strain it, and crumble it into a bowl. Add the grated parmesan and a pinch of black pepper. Stir to a homogeneous mix.
Place a tsp of the filling on each piece of filleted fish, roll it up and secure with a toothpick. Grease a baking tray with olive oil abundantly.
Cover tray with tomato slices and place a fish roll on each slice. Drizzle with olive oil. Preheat the oven to 392°F (200 degrees) and bake for 15-20 minutes.
Toast the sliced bread. Rub each slice with some garlic and add a little olive oil. Place a slice of baked tomato and arrange a sardine roll on top.
Serve the Sardine Bruschettas with a glass of chilled white wine.
