How to cook
Soak the mushrooms in hot water for 30 minutes and then cut them into thin strips. Boil the rice for the sushi for about 25 minutes (not too soft). In a pan, put the sugar, soya sauce and wine to boil, then add them to the cooked rice and mix.
Allow the rice to cool for about half an hour. Unfold a nori leaf carefully and place it on a sushi mat (or wet towel) with the smooth side down. Spread a thin layer of rice, leaving a distance of 1/2 an inch from the edges, which you then coat with the wasabi paste.
Cover with slices of shrimp, cucumber, mushrooms and avocado. Carefully wrap the leaf into a roll. Prepare the other nori leaf in the same way. Put the rolls to harden in the refrigerator for about an hour, then cut each roll into 8 equal pieces with a sharp knife.
