How to cook
Beat the eggs with the sugar until a cream is obtained. Add the oil and beat again.
Add the baking powder and vanilla.
The flour is added gradually, while stirring at all times.
Finally, add the peeled and grated in advance carrots.
The sponge cake mixture is mixed with a spatula and poured into a pre-greased and floured cake pan.
The carrot sponge cake is baked in a non preheated oven at 360°F (180 degrees) until it is fully baked and it is sprinkled with powdered sugar when it cools down.
