How to cook
Marinate the duck fillets for half an hour in 4 tablespoons of olive oil, the juice of 1 lemon, salt, pepper and chopped parsley. Then bake it in a grill pan on both sides and transfer it to a glass cook pot with a lid. Chop the onion and sauté it in a pan with a little heated butter.
Add the sliced mushrooms and allow to sauté until slightly softened. Pour in the wine + half a cup of hot water, allow to boil and thicken the sauce with a spoon of dissolved starch if desired. Season with salt and pepper and pour the sauce over the duck. Put it to bake in a pre-heated moderate oven for about half an hour.
The dish can also be prepared by putting all the ingredients raw in the glass cook pot, but in that case, bake it for about 1 hour.
