Chop the onion finely and fry it in olive oil. The potatoes are very finely grated into thin sheets, as for chips, using a grater and then dried. Clean the peppers and remove their stems and seeds.
Add the potatoes to the onion and fry them, carefully stirring. These fried vegetables are then drained for 5 minutes from the oil. Add the beaten eggs to them and flavour with spices.
Stuff the peppers with the mixture and arrange them on a greased tray. You can bake them in the oven or fry them in the oil that was drained from the potatoes.
