Add 4 egg yolks and one whole egg to the cottage cheese, stirring vigorously, then add the sugar, setting side about 2 tablespoons, a little cinnamon, about 2 tablespoons flour, lemon zest and candied fruit, cut into cubes.
Add the rum. Whip the remaining 3 egg whites into snow and add them to the cottage cheese very carefully, by spooning the mixture from the bottom up, not stirring in a circle. Brush with melted butter in a deep baking dish and pour the mixture in. Smooth it out well.
Bake in a heated oven at 320°F (160 °C) for half an hour. Allow the pudding to cool and serve sprinkled with the remaining sugar mixed with cinnamon.
