Grate the apples and mix them with half of the sugar, the lemon rind and juice. In another bowl, mix the flour with baking powder, semolina, the remaining sugar and cinnamon. Lay out a tray with baking paper.
Sprinkle the bottom of the tray with the powdery flour mixture, top with the apple mix, sprinkle with oil and alternate between these again in the same sequence. Finish on top with apples and oil. Put it to bake in a moderately heated oven at 392°F (200 °C) for about 45 minutes.
Sprinkle the finished cake with powdered sugar while warm. Consume it cold.
