Roasted St. George Lamb
- lamb - 1 small lamb, or a leg of lamb
- butter - 1 packet
- green onions - 6 - 7 bunches + 2 - 3 cloves
- green garlic - 1 bunch
- paprika - 2 tablespoons
- savory - 1 tablespoon
- black pepper
- salt - to taste
- lovage - a few bunches
Clean the lamb, optionally cut it or leave it whole. Salt it nicely. Combine the melted butter with the pressed garlic, paprika, black pepper, savory and thoroughly coat the lamb on all sides.
Allow it to marinate for 1-2 hours and arrange it in an oven dish in which you have crisscrossed vine twigs so that they form a raised platform. Cover with lovage bunches.
Top up with water up to the middle of the meat and place the foil. Put it to bake for about 2 hours and a half. Then remove the foil and add the chopped onions and garlic. Stir slightly and roast until tender.
