  • flour - 2 lb (1 kg)
  • milk - 8 1/3 cups (2 liters)
  • eggs - 8
  • feta cheese - 10.5 oz (300 g)
  • lard - 2/3 cup (150 g) or butter
  • oil - a little more than 1 cup
  • yeast - 10 - 15 drops for the cheese
  • salt - to taste


Knead a dough from the flour, 2 1/2 cups (600 ml) of cool water, the oil and a little salt, it should not be too hard. Sprinkle it with flour and leave it to rest for 20-odd minutes. The dough is formed into small balls, which are also allowed to rest for 15 minutes.

Then roll them out into thin sheets and leave them to dry slightly, while spread out. Grease a tray thoroughly and start arranging the sheets, smearing them with a little oil and sprinkling with a little feta cheese. Heat the milk to 95°F (35 °C) and put the yeast for the feta cheese in it.

Stir well and cover the tray with a thick towel for 30-40 minutes. Then add the eggs to the cheesy milk and mix. Pour this topping on the pie. Put it to bake in a heated oven at 356°F (180 °C) for 15 minutes or until ready.
