How to cook
The chicken is washed, dried and rubbed with salt. Put it to boil in a liter and a half of water.
Peel the carrot, celery, onion and wash and cut them into cubes. They are placed to cook along with the chicken. Season them according to your taste.
The meat is removed, it's deboned and also diced.
Strain the broth and place it back onto the heat.
The rice is washed and poured into the broth.
Beat the yolks with the juice of one lemon and gradually pour them into it before it boils, while stirring it at all times. Add the chopped chicken.
The Greek chicken soup is served sprinkled with parsley and lemon slices without the peel.
