How to cook
The tripe is cleaned and boiled in the vegetable broth. Drain and cut it into pieces or strips. All the vegetables are grated thin and put to get braised for a few minutes in hot oil.
Flavour the tripe with salt, pepper and marjoram and put it into a greased baking tray. Add the vegetables, pour on a glass of milk.
Optionally, you can scatter pieces of cheddar in the tray, and then seal in foil and put it to bake.
