Ingredients

  • couscous - 1 pack
  • spinach - 10.5 oz (300 g)
  • onions - 1 head, large
  • carrots - 1
  • tomatoes - 2
  • chilies - 1/2 tsp
  • curry - 1 tsp
  • nutmeg - 1 pinch
  • turmeric - 1/2 tsp
  • salt
  • oil - 1/3 cup (80 ml)

Preparation

Boil the couscous according to package directions and rinse with cold water. Clean and chop the spinach and other vegetables, and grate the carrot. Heat the oil in a deep pot and put the onions and carrot to stew.

Once slightly softened, add the chopped spinach with 2 tbsp (30 ml) of hot water. Stir and let it stew for 10 minutes, stirring often. Then add the chopped tomatoes one after the other in 3 lots and stir.

Add all the spices and let the sauce simmer until the tomatoes boil. The couscous is mixed with the prepared sauce. Serve with grated cheese if desired.find similar recipes here
