How to cook
Salt the duck breasts and rub them with black pepper. Get them to braise on both sides in butter and oil. Remove the meat and put the chopped onions in the same container to fry. Squeeze the juice from the oranges and add it to the onion. Cut the rind of 1 orange into large chunks and add it too.
Pour in the lemon juice, red wine and orange marmalade. Allow the sauce to boil, remove it from the heat, and season it with salt and black pepper. Put the duck breasts in a greased tray and pour the sauce on top.
Cover with foil and place the duck with oranges to bake in pre-heated oven for just over an hour. Remove the meat and strain the liquid from the orange peels, put it on the stove with 1 cup of orange juice and once it comes to a boil, thicken it with the diluted starch.
Once thickened, the sauce is flavored with spices. Serve the duck, topped with sauce and sprinkled with crushed almonds. Garnish with round orange slices.
