How to cook
Turn on the oven and preheat it to 360°F (180 degrees). Beat the eggs with the sugar and vanilla sugar. Once they turn into a fluffy white cream, add the butter, milk and half of the lemon juice and continue beating, until all of the products are well mixed.
Sift the flour with the baking powder once and then a second time directly into the liquid mixture, by stirring with a wooden or a silicone spoon.
Make rotating movements in one direction only. These steps are important to make the cake fluffy. If the mixture is thin, sprinkle it with a little more flour.
Grease and flour the bottom and walls of a suitable sponge cake tin and pour the mixture in it.
Cut the pears in halves, remove the seeds without peeling them and cut them into thin slices.
Arrange them on the sponge cake mixture, sprinkle it with the remaining lemon juice and sprinkle generously with vanilla sugar.
Bake for about 35 minutes or until it is fully baked. Leave it to cool completely before removing it from the sponge cake tin.
The fluffy sponge cake with pears and milk is ready.
