How to cook
Boil the quinoa according to the instructions on the package, strain it and as it is in the strainer, pour cold water over it.
Peel and dice the avocado and onion. Squeeze the lemon juice and a little salt and stir.
Cut the cucumber into very thin slices and if you decide to add eggs, cut them into circles and the asparagus - into 1 cm pieces.
Prepare a walnut dressing by finely chopping or grinding the walnuts (but not into a thin mixture) and mixing them with olive oil, vinegar and salt. You can add more vinegar if you like a more sour taste and the apple cider vinegar is very healthy.
To assemble the salad, use a round or square ring. At the bottom put a layer of quinoa, a little of the dressing, then a layer of avocado and onion, a layer of asparagus, again some of the dressing, pieces of cucumber and egg (optional).
You can choose the range of products for the quinoa salad yourself, but finish it off with the quinoa and walnut dressing.
Serve the vitamin salad sprinkled with dried coriander leaves.
