How to cook
The cauliflower is boiled for 10 minutes, it is then strained and grinded in a blender along with the parsley, garlic and 3.5 oz (100 g) of dry wholemeal bread. The other 2.8 oz (80 grams) of it are also ground separately before or after - they will be used to roll the delicious vegetable patties in the end.
Beat one large egg into the cauliflower mixture, add the hard cheese, ground into powder and the grated yellow cheese.
Season with a little salt and knead the patty mixture well with the cauliflower.
With greased or moistened hands take from the mixture, form balls and flatten them. Roll each patty in the remaining ground wholemeal bread and arrange them in a tray covered with baking paper.
Sprinkle the cauliflower patties with olive oil and bake them in a preheated oven at 390°F (200 degrees) until they aquire a golden brown color (about 20 minutes).
Serve the cauliflower patties hot in the company of Aioli sauce.
