Cut the eggplants into round slices, sprinkle them with salt and leave to drain from the bitter juice. Rinse, dry and fry them rolled successively in flour, egg and breadcrumbs.

The crumbed eggplants are served with a sauce made from the mayonnaise, whipped with the cream, crumbled feta cheese and spices. Garnish with sliced tomatoes.
