Put the sugar to caramelize in a pie form on the stove until it complete dissolves and gets a caramel color. Arrange croissants with crème brulee on top.
Beat the eggs well with 1 cup of sugar. Pour in the milk and put the vanilla in. Pour this over the croissants and bake in a water bath at 356°F (180 °C), about 80 minutes.
