Beat the flour with the soda water, a pinch of salt, sugar and milk. Add 3 eggs. Beat well. Take a spoon of this mixture and pour it into a greased and well-heated pan. Once fried on one side, flip it over to redden on the other side. Grate all the cheeses.
Sprinkle it with parsley, a pinch of black pepper and stir the mixture. This is the filling for the pancakes. Place it in the middle, it will shrink into a pocket. Crumb in this order: flour, egg, breadcrumbs, egg again and fry until browned in hot oil.
