How to cook
Clean the duck well, season the inside and outside with spices - hot pepper, paprika, salt and black pepper.
Cut the orange and 2 apples into pieces, chop the dried fruit, garlic and walnuts. Fill the duck with them.
The onions and celery are also cut and distribute them on the bottom of the baking pan in which you will roast the duck. Put the last one on top. You can also add potatoes if you wish, but it's not necessary.
Grease the meat with butter, add water and 1.5″ (4 cm) of white wine. Wrap the large baking pan with aluminum foil. Peel the third apple and place it next to the duck.
Roast for half an hour at 480°F (250 degrees), then another 2 hours at 390°F (200 degrees). Remove the foil and roast the traditional stuffed American duck for another half hour.
