How to cook
Fry the chopped onion in heated oil.
Add the spices and stir, by frying a little more, until they release their aroma.
The black beans are strained and mashed - not quite pureed, but simply not whole grains.
Add that to the onion along with the tomato puree and a few tablespoons of water.
Cook for a few more minutes until everything thickens, while stirring occasionally.
The tomatoes are cut into small cubes and iceberg leaves are cut into small pieces.
The shells are stuffed, first, with the black beans, then a little iceberg and a tomato on top.
