How to cook
Grate the zucchini and sprinkle them with a teaspoon of salt, leave them for about an hour, then squeeze them very well from the liquid.
Add 4 tablespoons of oatmeal to the squeezed zucchini and grind the rest in a blender.
In a blender, grind the parsley and spring onions.
Pour everything over the zucchini and add the milk and white cheese (if you like). Stir and knead everything well.
If you find that the mixture is thinner, add a little oatmeal flour.
Shape the zucchini patties. Put baking paper in a tray and arrange them on top.
Drizzle them with a little olive oil and bake them, until they're fully baked in a preheated oven at 360°F (180 degrees).
Serve the vegetable patties warm, because that's when they are the most delicious.
