How to cook
The cleaned and washed rabbit is cut into large pieces, which are salted and rubbed with black pepper.
They can be sealed in a pan if you like, but it is not required.
The peppers, onion, tomatoes, garlic are cleaned, wash and cut into bulky pieces. The washed spinach is also chopped and mashed with a little salt.
In a clay pot with a capacity of 4.5 - 5 liters (1.5 gal), pour a little fat, arrange a layer of vegetables as well as spinach, which are also salted and arrange the rabbit on them. Add the bay leaf, a pinch of paprika and sprigs of rosemary and parsley on top and drizzle with oil. Another layer is made in the same way.
Pour both types of wine and water or broth. More liquid can be added for more sauce.
Cover the clay pot and place it in a non preheated oven, which is switched on to heat up to 300°F (150°C). The rabbit in a clay pot is roasted on low heat for 2 hours, then the lid is removed, the temperature is raised to 360°F (180°C) and it is cooked until it has lightly browned on the surface.
The rabbit with spinach in a clay pot is served warm, sprinkled with fresh parsley.
