How to cook
First, grind the pumpkin pieces along with the orange peels in a blender.
Add honey, cinnamon, oil and the egg. Blend well, until a homogeneous mixture is obtained.
Add the flour along with the baking powder and about 3.35 oz (95 g) of oatmeal.
The resulting mixture is mixed very well. Grease your hands and form balls out of it. Flatten them lightly and arrange them in a baking tray. Leave space between the cookies.
In case you find it difficult to shape them with your hands, you can scoop and shape the cookies with a spoon.
Sprinkle the shaped cookies with the remaining amount of fine oats.
Preheat the oven to 340°F (170 degrees) and bake the cookies for about 20-25 minutes.
Wait a few minutes, because they are very delicate at first.
You can then remove them from the tray and place them on a wire rack to cool evenly.
The pumpkin cookies with honey and cinnamon are very soft and delicious.
