How to cook
For this tripe in butter, boil the tripe in a pressure cooker for 1 hour along with the celery, water (enough to cover it) and enough salt. Cut it into large pieces.
In a deep frying pan, fry the dried peppers and the paprika in the fat for a short time.
Add the tripe immediately, 5 tbsp. of the broth and black pepper.
Stew the stewed beef tripe for 10 minutes under a lid.
Add the celery to the stewed beef tripe.
