How to cook
Peel, wash and grate the potatoes. Add salt and squeeze the juice.
Heat the butter in a pan. Add the potatoes and saute them, until they soften. Remove the pan from the heat. Leave them to cool.
Grate the white cheese and yellow cheese (leave some of the yellow cheese to sprinkle at the end) and add them to the potatoes. Stir, until a smooth mixture is obtained.
Spread the mixture in a baking tray, by covering the bottom with baking paper. Using a cup, shape the nests.
Bake the patatnik in a preheated oven, until it aquires a golden color.
Beat the quail eggs in the nests, sprinkle them with yellow cheese and bake them, until they're fully baked.
Garnish them with parsley.
The patatnik with quail eggs is ready.
