How to cook
Cut the pork loin into large pieces.
Arrange it in a pot, by covering it with sea salt.
It is left like that for 24 hours. Then wash and dry each piece.
Mix 2 tbsp. paprika, 1 tbsp. savory herb, 1 tsp. black pepper and 1 tsp. cumin in a bowl.
Then the meat is rolled into them. Rit it well with the spices.
Hook the homemade pastrami in a cold place and let it stand for at least a week.
You now have the perfect dry appetizer for wine.
