How to cook
The apple peel contains many vitamins and we often just throw it away.
Here's a way to get the most out of it by making healthy muffins:
Put the thinly peeled peel in the blender jug along with the citrus peels, cinnamon and flour.
Run the appliance at maximum speed to grind the fruit peels along with the flour.
Pour the almond milk, olive oil, agave or honey syrup and add the baking powder (it should be added with the dry ingredients, but in this case it is not appropriate to grind with the flour, so add it at the end).
Run the appliance at medium speed to blend the mixture well and when it is homogeneous, check the density. The muffin batter should be like plain cake batter or slightly thinner. If it is too thin, add a little more spelt flour.
Distribute it in greased with olive oil paper muffin cups and place them in a muffin tin. There are about 8-10 pieces.
Bake them at 340°F (170 degrees) in a preheated oven for about 15-20 minutes or until they're fully baked.
Once you remove the healthy muffins from the oven, leave them to cool for 15 minutes before removing them from the muffin tin and peeling the paper off of the apple muffins.
They are a great breakfast for champions and delicious dessert to eat without feeling guilty!
* The amount of sweetener can be increased if we want the healthy apple muffins to become sweeter.
