How to cook
Grease the bottom of a round baking pan with a diameter of 9″ (22 cm), sprinkle it with a little polenta and arrange thin circles of red orange on the bottom - it can be peeled or not. Sprinkle the citrus with brown sugar.
Preheat the oven to 320°F (160°C) and put the baking pan in for 8-10 minutes, then take it out and increase the temperature to 350°F (175°C).
Beat the eggs with the sugar, until a fluffy mixture is obtained. Pour 2.8 oz (80 g) of honey, olive oil and yogurt and continue to beat, until a homogeneous mixture is obtained.
Add the polenta and flour in portions, then baking powder and mix, until a homogeneous mixture is obtained.
Pour the mixture into the baking pan over the orange and put it in the preheated oven. Bake the cake for 40 minutes or until it is fully baked.
After removing it from the oven, wait 5 minutes and turn it over onto a serving tray. Spread it with the remaining slightly melted honey. If you do not like very sweet foods, reduce the amount.
