How to cook
Heat a tea cup of water along with the sugar and make a sugar syrup.
Dissolve the starch and gelatin in the remaining water.
Just before the sugar syrup boils, carefully add the diluted starch and gelatin and stir. Reduce to low heat and boil the mixture, until it thickens and stir at all times. Shortly before it thickens, add lemon juice and stir.
Divide the mixture into two parts - add blueberry jam to one and lemon peel to the other.
Grease two small baking pans with olive oil or vegetable oil and pour the mixture in them.
Spread it out evenly and allow the mixture to turn into jelly completely.
Cut the Turkish delight into small pieces and roll each one in coconut shavings.
