How to cook
Dissolve the yeast and sugar in half of the warm water, add 1 tbsp. of flour and stir.
Leave it in a warm place to activate.
Wrap the dough with cling film and leave it in a warm place to rise and almost increase its volume 3-4 times.
Place the dough onto a floured surface without kneading it too much.
Roll it out into a 3.1″ (8 cm) thick crust, cut it into squares or rectangles with a knife and fry in preheated oil over low heat.
Arrange the prepared mekitsi onto kitchen paper to absorb the excess fat and serve them warm.
The Lean Mekitsi are ready.
