How to cook
Cut the chicken into bite sized chunks and saute with a drizzle of olive oil.
When almost cooked, add the finely chopped onions.
Cook on low heat, stirring occasionally, until the onions are cooked, as well.
Add the spinach and cook for a minute to reduce its volume.
Add the rice and stir.
Pour in 7 cups (1.5 l) of hot water and stir again. Cook on low heat to prevent from burning.
Simmer for 20-25 minutes, or until the rice is completely cooked.
Season with spearmint and salt.
